With food prices nowadays, eating out might seem less daunting than a hefty grocery bill, but that’s a quick fix and actually costs you more money in the long run. 

Buying ingredients will take you much further than buying a meal at a time. 

When it comes to health, eating at home is the way to go. 

You’re not able to control the amount of sugar, fat, preservatives or sodium when you’re eating out. You may be able to customize the order to a certain degree (you know how I feel about mindful swaps), but you CAN’T control where the ingredients are coming from, what they use to cook it in or what pre-mixed seasonings they’re using. 

Eating at home ALWAYS allows you to control exactly what’s going into your body…in a healthy mindful way.

Try experimenting with buying ingredients that can be used for multiple meals and see how far your grocery bill can take you! 🤩

Intermittent fasting, coffee for breakfast, only having bone broth for lunch and then limiting yourself to a plate of rabbit food ALL with 60+ minutes of exercise is not enough to maintain a healthy metabolism nor body.⁣

This is exactly why people are so confused about nutrition, fitness, health and wellness. ⁣

Because influencers and celebrities are promoting restrictive habits that are borderline disordered. ⁣

Eat when you’re hungry, nourish your body with FOOD, move your body mindfully, don’t lean on restrictive diets, and definitely enjoy something more filling than bone broth for lunch! 🤣⁣

I used to love having French Toast every weekend growing up. It reminds me of Saturday mornings with my late grandpa as we’d sit together chatting about life while enjoying the sweet fresh Challah french toast drenched in maple syrup.⁣
⁣
But as I started my weight loss journey, I found easy ways to lighten up my favorite foods without the added calories or sugar. So I tweaked it to be low sugar (actually NO sugar) with the same delicious taste.⁣
⁣
I hope you enjoy this classic breakfast so you can indulge in your favorite childhood foods while still reaching your weight loss goals. 🙌🏻⁣
⁣
WHAT YOU’LL NEED:⁣
⁣
1 loaf French brioche bread⁣
2 cups almond milk⁣
6 eggs⁣
2 tsp vanilla extract⁣
½ cup monk fruit or allulose (I used @traderjoes allulose)⁣
Plant based margarine ⁣
⁣
Topping ⁣
1 tsp cinnamon ⁣
1/4 cup monk fruit ⁣
⁣
RECIPE:⁣
⁣
1️⃣ Grease 9x13-inch baking dish with plant based margarine.⁣
2️⃣ Tear bread into chunks, or cut into cubes, and evenly distribute in the pan.⁣
3️⃣ Whisk together almond milk, eggs, monk fruit, and vanilla together in a bowl until well combined.⁣
4️⃣ Pour evenly over bread. Cover pan and store in fridge for at least 8 hours (overnight preferably). ⁣
5️⃣ When you’re ready to bake the casserole, preheat oven to 350°F. Remove casserole from fridge and sprinkle topping over the top.⁣
6️⃣ Bake covered with aluminum foil for 30 minutes then uncovered for 15-20 minutes, until casserole is browned and bubbling.⁣
7️⃣ Allow to cool slightly before slicing into 12-15. Top with nut butter and drizzle with sugar free maple syrup and blueberries. Enjoy!⁣

Serves 12. For 1 serving: 200 calories, 6g sugar and 7g protein⁣

The main reason I’m here today as @themindfulnutritionist and your go-to weight loss dietitian is because I struggled with my weight for many years as a teenager. I was told at 18 that I was pre-diabetic, obese and had non-alcoholic fatty liver disease. Doctors told me that in order to lose the weight I’d have to do keto, cut calories, and be miserable on diet after diet. Knowing there was NO WAY I was going to be able to keep up with these restrictive habits forever, I decided to lose weight my own way and started eating mindfully. 65 pounds lighter and a year and a half later, I made it my mission to help other women do the exact same. 🤩⁣

I went to school to become a dietitian, was trained in bariatrics and got to work. ⁣
Fast forward, I decided to create my own business and program dedicated to helping women sustainably lose weight MY WAY. ⁣
